This Truffle Recipe = Happy Valentine!

Confetti Cake Cookie Dough Truffles

Author: Taryn Camp

Ingredients:
Six single serve cups The Cookie Dough Cafe Confetti Cake cookie dough
Two options- either use a store-bought cake with frosting (preferably a layer buttercream cake) or a cake mix with prepared frosting.
12 Oz bag semisweet chocolate chips + extra for drizzle if desired
Decorative glitter or sprinkles, optional

Instructions
The amount of truffles will depend on the style of cake you are using. Be sure to mix your cake first and then start preparing the truffles.
If using store-bought, you can use a slice or an entire cake! In a large bowl, scoop a few spoonfuls of the cake and frosting and mix. It should be the consistency of moist cake. If it’s too saturated with frosting, add more cake. If it’s too dry, add more frosting. Continue to do this until you’ve used the entire cake- minus what you don’t need to keep the consistency.

If using a cake mix- prepare the cake in a 13 x 9 pan according to the package directions. Let cool completely. Stir in 1/3 cup of prepared frosting. If it’s not moist enough, continue to add frosting by the tablespoon until it’s at the desired consistency.

To assemble-
Scoop teaspoon size balls of cookie dough from the containers and roll them between your hands until they are smooth. Start with a tablespoon size scoop of cake pop batter and cover the cookie dough completely. Use more if needed to cover the cookie dough. Repeat until you run out of cake, depending on how much was made. Place the truffles in the freezer for 15 minutes.

Prepare cookie sheets with parchment for the next step.

Meanwhile melt half of the bag of chocolate chips until smooth. Make sure to only do half so it doesn’t harden or thicken while you’re dipping. Remove the truffles from the freezer, and dip them into the chocolate one at a time. Use a fork and submerge them into the chocolate shaking off any excess. Place them on the parchment lined tray. Melt the other half of the chocolate when needed to finish the rest.

Place them in the fridge for 15 minutes. When set, drizzle with additional melted chocolate and glitter or sprinkles.
