Monster Cake – YUM!

Ready for Fall? This yummy Monster Cake will surely jump start the season! Here’s what you need-

For the cake:
1 box vanilla cake mix
1 box vanilla pudding mix
1 cup water
1/2 cup + 1 tbsp vegetable oil
4 eggs
1/2 cup peanut butter chips
1/2 cup chocolate chips
For the filling:
1 jar The Cookie Dough Cafe® Monster Cookie Dough (The Cookie Dough Cafe Monster cookie dough)

For the frosting:
4 sticks of butter- 2 salted, 2 unsalted
8 cups powdered sugar
2 tsp vanilla
1 cup unsweetened cocoa powder
4 oz semisweet chocolate, melted and cooled
6-8 tbsp heavy cream
Don’t want to make your own frosting buy store bought, we won’t tell.

For the decorations:
decorative sprinkles
mini M&Ms

Instructions

For the cake:
Preheat oven to 350 degrees and spray 3- 6″ round pans with baking spray
In a large bowl combine the cake mix, pudding mix, water, vegetable oil, and eggs. Stir until fully combined. Add in the chocolate and peanut butter chips.
Pour the batter evenly among all 3 pans. Bake according to package directions and let cool completely.

For the cookie dough:
Bring the cookie dough to room temperature so that it’s easier to work with

For the frosting:
In a mixing bowl, beat the butter until smooth.
Add in 4 cups of powdered sugar and continue to beat.
Add in the vanilla, cocoa powder, chocolate and heavy cream and mix.
Finish with the last 4 cups of powdered sugar. Add extra heavy cream if needed.

Assembly:
On a cake board or flat surface, place on layer of the peanut butter and chocolate chip cake. Spread 1/2 cup of frosting on top of the layer.
Using 1/3 of the cookie dough, smooth it in your hands to be a circular flat layer. Lay it directly on top of the frosting.
Top that with another cake round and repeat the process. Add the last cake round on top. Be sure to flip it so that the smooth side is on top.
Apply a crumb coat to the cake and freeze for 15 minutes.

While the cake is freezing, roll the remainder of the cookie dough into balls. Place those in the freezer until ready.
Apply another layer of frosting to the cake. Using a cake scraper, smooth the sides. Place in the fridge for 10 minutes to set.
Remove from the fridge, and place a row of cookie dough balls around the base of the cake. Add decorative sprinkles.
Smooth the top of the cake with an offset spatula and then add a layer of decorative sprinkles
Using a 1M tip, pipe swirls of frosting onto the top of the cake. Top with extra sprinkles and M&Ms in the center.
